HARVEST SALAD + PEACH LEMON TIME VINAIGRETTE

Talk about refreshing! 😋 The super easy homemade peach vinaigrette brings it all together for a healthy plant-based bowl! Summer Harvest Salad 🥗 SERVES 2 LARGE SALADS (or 4 appetizer salads) • 1/2 C canned white beans, marinated in 1/4 C red wine vinegar, 1 TBSP swerve, coconut sugar or maple syrup, salt, and pepper for 15-20 min • 1 small bunch lacinto kale, chopped, drizzled with 1/2 tsp EVOO + juice of 1 lemon, and massaged for 15-30 seconds until tender • 2 C sunflower greens • 1 English cucumber, spiralized • 1 red heirloom tomato, sliced • 1/2 C golden cherry tomatoes • 1 peach, sliced • 1 ear of sweet corn, boiled and removed from cob • 1/2 C peas • 1/2 C snap peas, halved • 1/4 red onion, thinly sliced • 1/4 C candied or toasted pecans • 1/4 C fresh mint, chopped Peach Lemon Thyme Vinaigrette 🍑 • 2 TBSP peach jam • 2 TBSP balsamic vinegar • 2 TBSP champagne vinegar • 2 TBSP olive oil (optional

  Recipe by:   @LegallyPlantBased RECIPE: Filling: 150 g vegan shredded mozzarella style cheese 1 small bunch parsley, finely chopped 1 tsp dried oregano or mixed dried herbs 1 tsp onion powder 1 tsp nigella seeds salt & pepper to taste 1 tbsp corn starch 15 triangular phyllo dough sheets (you can cut them yourself if you can’t find this shape at the store and you can also use squared spring roll sheets instead) oil for frying Aleppo Chili Infused Agave Syrup: 100 ml agave syrup 2 tsp Aleppo Chili flakes Pinch of sea salt To seal: 1 tbsp all purpose flour 2 tbsp water Top with: Aleppo Chili Infused Agave Syrup Parsley Nigella seeds METHOD: - Place all ingredients for the syrup in a pan over medium heat, stir frequently until is starts to bubble, turn heat down to low and let cook for 10 minutes while frequently stirring.   Recipe by:  @jackfruitfulkitchen SERVES 4 • 1 head cauliflower, cut into florets • 1 C brown rice flour or GF all purpose flour • 1 C water or plant milk • 1 TBSP liquid aminos • 2 TBSP orange juice • 1/2 tsp garlic powder Sauce 🍊 • 3/4 C orange juice • 1/2 C water • 1 TBSP orange zest • 1” piece ginger • 2 garlic cloves • 1 TBSP chili garlic sauce • 1/4 C rice vinegar • 1-2 TBSP liquid aminos or soy sauce • 1/4 - 1/3 C swerve, coconut sugar or sweetener of choice • crushed red peppers, to taste • 1 tsp tapioca flour (or cornstarch) + 2 TBSP water To Serve 🥦 • green onions, chopped • broccolini, steamed • Shirataki rice (for lower carb) or jasmine rice 1️⃣ Combine ingredients for batter in a large bowl. If it’s too thick, add extra liquid. Pour in cauli and toss. One by one, transfer cauliflower to two parchment lined baking sheets, letting excess batter drip off. Do not overcrowd.
